ingredients:
125 grams butter
120 grams fine granulated sugar
2 eggs
250 grams plain flour
1 tablespoon baking powder
125ml milk (low fat)
blueberry jam/topping /filing
vanilla essence
maybe can add up 90grams of vegetable oil
method
1. cream butter and sugar until light and fluffy. add eggs gradually with vanilla essence
2. fold in sifted flour and baking powder. pour in milk and mixed gently
3. pipe 1/3 full of the mixture onto paper cups placed in muffin moulds.
4. add in 1 teaspoonsof blueberry and pipe more batter to fill 80% of the cups.
5. bake for about 20-25 minutes at 200 c.
you can also put the blueberry jam as a topping or make other types of topping...refer to topping recipe below....
